Cooking Authentic Curry Goat: A Step-by-Step Guide

Ingredients:

  • 2 lbs high-quality goat meat
  • 2 tbsp curry powder
  • 1 tbsp allspice (pimento seeds)
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 Scotch bonnet pepper, deseeded and chopped (adjust to taste)
  • 1 tsp ginger, grated
  • 2 spring onions (scallions), chopped
  • Salt to taste
  • 3 cups water or broth
  • 2 potatoes, cubed (optional)
  • Fresh coriander (cilantro) for garnish

Instructions:

  1. Marinate the Meat: In a large bowl, combine the goat meat, curry powder, allspice, salt, half of the chopped onions, garlic, Scotch bonnet pepper, ginger, and spring onions. Mix well, ensuring the meat is well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.

  2. Sear the Meat: In a large pot, add a splash of oil over medium heat. Add the remaining onions and sauté until translucent. Add the marinated meat and sear on all sides until it’s browned.

  4. Adding Potatoes: If you're using potatoes, add them in the last 30 minutes of the cooking process.

  5. Serve: Once the meat is tender and the sauce thickened to your liking, remove from heat. Garnish with fresh coriander.
